Apple & Cinnamon Crumble Bars

Alphabet Cookies recipe

Ingredients:

  • 450g (1 lb) cooking apples – peeled and roughly chopped
  • 75g (3oz) raisins
  • 50g (2oz) light brown sugar
  • 1 tsp ground cinnamon
  • zest of 1 lemon
  • 200g (7oz) plain flour - sieved
  • 250g (9oz) soft light brown sugar
  • ½ tsp Dr. Oetker Bicarbonate of Soda
  • 150g (5oz) rolled oats
  • 150g (5oz) butter

Method:

  1. Preheat the oven to 180°C/350°F/Gas Mark 4 and grease a 20cm (8 inch) square cake tin.
  2. Place the apples, raisins, sugar, cinnamon and lemon zest into a saucepan with a lid and cook over a low heat until the apples are cooked through.
  3. Mix together the flour, sugar, Bicarbonate of Soda, rolled oats and butter until the mixture resembles fine breadcrumbs.
  4. Spread half of the mixture over the bottom of the cake tin and press down.
  5. Spread the apple mixture over the top then top with the remaining crumble mixture.
  6. Press down firmly then bake for 30-35 minutes until golden brown.
  7. Remove from the oven and allow to cool before cutting into squares.
