Battered Lemon Chicken Goujons

Ingredients

  • 2 large chicken breasts, cut into strips (goujons)
  • 130g (4½oz) plain flour
  • 1 medium size egg, beaten
  • 10ml (2 tsp) Dr. Oetker Baking Powder
  • ¼ tsp salt
  • 200ml (7fl.oz) milk
  • 3 tsp Dr. Oetker Natural Lemon Extract

Method

  1. Sift the flour, salt and baking powder into a large bowl.
  2. Gradually beat in the egg, milk and Natural Lemon Extract with a wire whisk.
  3. Dip the strips of chicken into the batter and carefully place in a deep fat fryer at 190ºC for approx. 5 minutes until batter has turned a deep golden brown.
  4. Alternatively, the chicken can be fried in at least 5cm /2 inch of oil in a large saucepan for a similar length of time.
  5. Serve with a crisp green salad and jacket potatoes.  The lemon mayonnaise makes an ideal accompaniment to this dish.
