Alphabet Cookies recipe

Ingredients

  • Dr. Oetker Edible Wafer Paper
  • 50g (2oz) margarine
  • 50g (2oz) golden syrup
  • 50g (2oz) demerara sugar
  • 50g (2oz) plain flour, sieved
  • 40g (1½ oz) mixed chopped nuts
  • 40g (1½ oz) Dr. Oetker Crystallised Ginger, chopped
  • 40g (1½ oz) glacé cherries, chopped
  • 125g (4½ oz) Dr. Oetker Milk Continental Chocolate, melted

Method

  1. Preheat the oven to 170ºC/325ºF/Gas Mark 3 and line two baking trays with Edible Wafer Paper.
  2. Gently melt together the margarine, golden syrup and sugar until the sugar has fully dissolved.
  3. Remove from the heat and stir in the remaining ingredients.
  4. Place teaspoons of the mixture onto the edible wafer paper, leaving room for spreading, and flatten slightly with the back of a spoon.
  5. Place in the oven and bake for 12 -15 minutes or until a light golden colour, allow to cool and then tear away from the edible wafer paper.
  6. Coat the back of the Florentines with the melted Milk Continental Chocolate and mark with a fork.
  7. Don’t worry if the Florentines stick to the edible wafer paper as you can eat it unlike greaseproof paper!
