Fresh Lime, Ginger & Coconut Jellies

Ingredients

  • 4 limes
  • 2cm (¾ inch) piece fresh root ginger
  • 200g (7oz) caster sugar
  • 4 leaves SuperCook Select Leaf Gelatine
  • 200ml (7fl.oz) reduced fat coconut milk
  • 4 thin slices of lime

Method

  1. Using a vegetable peeler, pare the rind from 2 limes into a small saucepan.
  2. Peel and finely slice the ginger.
  3. Add 150g (5oz) sugar and 150ml (5fl.oz) water and heat, stirring until dissolved. Bring to the boil, remove from the heat and leave to cool.
  4. Squeeze the juice from all the limes and mix into the cooled lime and ginger syrup.  Strain through a sieve lined with muslin.
  5. Gently heat the coconut milk with the remaining sugar, stirring until just dissolved, and without boiling. Allow to cool.
  6. Place 45ml (3 tbsp) water in a small heatproof bowl. Using a pair of scissors, snip the Fine Leaf Gelatine into the water. Leave to soak for about 10 minutes.
  7. Stand the bowl over a saucepan of simmering water and heat gently until dissolved.  Alternatively, heat in the microwave for about 25 seconds on High. Do not allow to boil as this prevents a proper set taking place.
  8. Stir half the gelatine mixture into the coconut milk and divide between 4 dessert glasses. Chill until set.
  9. Once the coconut milk has set, re-melt the remaining gelatine as above, if necessary, and stir into the cooled lime syrup. Pour over the coconut jelly to make a layer on top.
  10. Float a lime slice in the top of each and chill until set. Serve straight from the glasses.
