Ginger Cake

Ingredients

  • 225g (8oz) plain flour
  • 1 tsp mixed spice
  • 2 tsp ground ginger
  • 150ml (1/4pint) whole milk
  • 1 tsp Dr. Oetker Baking Powder
  • 110g (4oz) butter or margarine
  • 110g (4oz) dark brown sugar
  • 110g (4oz) golden syrup

Method

  1. Pre-heat the oven to 150ºC/300ºF/Gas Mark 2 and grease and line a 2lb loaf tin.
  2. Sift together the flour, mixed spice and ginger into a bowl.
  3. Gently warm the milk and Baking Powder in a saucepan until tepid.
  4. Meanwhile, gently heat the butter or margarine, sugar and syrup in a saucepan until all the sugar has dissolved and the ingredients are combined.
  5. Beat the syrup mixture into the flour and then beat the milk into the mixture until it forms a smooth batter.
  6. Pour into the prepared tin and bake for approximately 50 minutes until firm to the touch. Allow to cool before removing from the tin.
