Smoked Chicken & Raspberry Salad with Vanilla Dressing recipe

Ingredients

  • 450g (1lb) boneless smoked chicken, skin removed
  • 1 head of Romaine lettuce, trimmed and washed
  • 100g (4oz) radishes, trimmed and washed
  • 225g (8oz) fresh raspberries
  • a small bunch of fresh chives

For the dressing

  • 60ml (4 tbsp) sunflower oil
  • 30ml (2 tbsp) raspberry vinegar
  • 15ml (1 tbsp) pale, mild clear honey such as Acacia
  • 10ml (2 tsp) SuperCook Select Vanilla Extract with seeds
  • salt and freshly ground pink or white pepper

Method

  1. Either thinly slice or shred the chicken. Break up the lettuce leaves and arrange in the bottom of 4 serving bowls. Thinly slice the radishes.
  2. Carefully toss the chicken, radish and raspberries into the salad, cover and chill until ready to serve.
  3. For the dressing, place all the ingredients in screw top jar, seal, and shake well to mix. Stand for 30 minutes to allow the flavours to develop.
  4. When ready to serve, shake the dressing and pour a little over each salad. Sprinkle with chives and serve.
