Date & Walnut Bread
Ingredients
- 100g (4oz) wheat bran
75g (3oz) dark brown sugar
100g (4oz) pitted dates, finely chopped
50g (2oz) walnut pieces, chopped
300ml (1/2pt) whole milk
1 ½ tsp Dr. Oetker Natural Orange Essence
1 egg, beaten
100g (4oz) wholemeal plain flour
10ml (2 tsp) Dr. Oetker Baking Powder
Method
- Preheat the oven to 180 C/ 350 F/ Gas Mark 4. Grease and line a 450g (1lb) loaf tin. Put the bran, sugar, dates and walnuts in a bowl and pour over the milk and orange essence. Mix well and allow to soak for 1 hour.
- Mix in the egg. Sieve over the flour and baking powder, adding any husks that remain in the sieve, and mix well. Spoon into the prepared tin and smooth the top. Bake in the oven for 50 minutes - 1 hour or until a skewer inserted in the centre comes out clean. Turn on to a wire rack to cool. To serve, slice quite thickly and spread with butter or soft cheese. Delicious with orange marmalade
