Banana & Pecan Muffins
Ingredients
- 250g (9oz) self raising flour
- 1 tsp Dr. Oetker Baking Powder
- 50g (2oz) butter
- 75g (3oz) caster sugar
- 1 large ripe banana - mashed
- grated rind of a lemon
- 110g (4oz) pecan nuts – chopped
- 2 medium size eggs
- 200ml (7fl.oz) milk
- Dr. Oetker Muffin Cases
Method
- Pre-heat the oven to 200ºC/400ºF/Gas Mark 6. Place 12 Muffin Cases into a muffin / deep cupcake tin.
- Place the flour and Baking Powder in a large bowl, add the butter and rub in until the mixture resembles bread crumbs.
- Stir in the sugar, bananas and grated lemon rind.
- Mix together the eggs and milk and add to the mixture. Add pecans and mix gently to form a lumpy batter.
- Spoon into the muffin cases and bake for approximately 25-30 minutes until golden brown.
- Remove from the muffin tin and serve warm.
Makes: 9 large muffins
