Banana & Pecan Muffins

Ingredients

  • 250g (9oz) self raising flour
  • 1 tsp Dr. Oetker Baking Powder
  • 50g (2oz) butter
  • 75g (3oz) caster sugar
  • 1 large ripe banana - mashed
  • grated rind of a lemon
  • 110g (4oz) pecan nuts – chopped
  • 2 medium size eggs
  • 200ml (7fl.oz) milk
  • Dr. Oetker Muffin Cases

Method

  1. Pre-heat the oven to 200ºC/400ºF/Gas Mark 6. Place 12 Muffin Cases into a muffin / deep cupcake tin.
  2. Place the flour and Baking Powder in a large bowl, add the butter and rub in until the mixture resembles bread crumbs.
  3. Stir in the sugar, bananas and grated lemon rind.
  4. Mix together the eggs and milk and add to the mixture. Add pecans and mix gently to form a lumpy batter.
  5. Spoon into the muffin cases and bake for approximately 25-30 minutes until golden brown.
  6. Remove from the muffin tin and serve warm.

Makes: 9 large muffins
