Breakfast Banana and Muesli Muffins
Ingredients
- Dr. Oetker Muffin cases
225g (8oz) wholemeal plain flour
1 level tbsp Dr. Oetker Baking Powder
100g (4oz) light brown sugar
75g (3oz) unsweetened muesli
2 medium eggs, beaten
1 tsp Dr. Oetker Natural Vanilla Extract
75g (3oz) butter, melted
6 tbsp milk
1 large ripe banana, mashed
Method
- Preheat the oven to 180 C/350 F/ Gas Mark 4. Line 8 deep cup muffin tins with the muffin cases.
- Sift the flour, baking powder and salt into a mixing bowl and add any husks that remain in the sieve. Stir in the sugar and muesli.
- Make a well in the centre and gradually blend in the egg, vanilla extract, melted butter and milk to form a soft cake mixture. Fold in the mashed banana.
- Divide the mixture between the muffin cases (they should be quite full) and bake in the oven for 30-35 minutes until risen and lightly golden. Transfer to a wire rack to cool. Best served warm, split, and spread with butter and jam.
