Happy Faces Cake

Ingredients

  • 1 x 20cm (8inch) Filled Victoria Sandwich Cake
Dr. Oetker 25cm (10 inch) round silver cake board
250g (9oz) Dr. Oetker Ready roll icing
    Dr. Oetker Easy Ice
Dr. Oetker Coloured Ready roll Icing
    Dr. Oetker Milk Chocolate Beans
    Dr. Oetker Birthday Candles
    Dr. Oetker Jelly Diamonds
    Dr. Oetker Writing Icing
    100g (4oz) icing sugar
    Dr. Oetker Pink Food Colouring
    1ml (¼ tsp) cocoa powder
    2-3 tsp warm water
    10 uniced cup cakes

Method

  1. Place the cake on the board and spread thinly all over with Easy Ice. Roll out  the ready roll icing on a surface lightly dusted with icing sugar to cover the cake completely. Smooth down over the cake and trim as necessary.
  2. Roll out the coloured ready roll icing thinly and stamp out letters to spell "HAPPY BIRTHDAY". Secure on top of the cake using a little water. Push milk chocolate beans round the edge of the cake. Secure the jelly diamonds round the middle of the cake using a little writing icing.  Push the candles into their holders and then arrange in the top of the cake. Set aside.
  3. Sieve the icing sugar equally into 2 small bowls. Add a drop of pink colouring to one and sieve the cocoa into the other. Mix each together with sufficient water to form a smooth spreadable icing. Spoon the pink icing on to half the cakes and spread to form a neat circle. Do the same with the chocolate icing over the remaining cakes. Let the icing set for at least 30 minutes before decorating with writing icing.
